What I ate today + Vegetarian recipe!

Hello Everyone!

In light of my post from a few weeks ago Is Vegetarianism For You? I wanted to share this super simple, protein packed (meatless!!) and DELICIOUS recipe I threw together this afternoon.

Egg Protein Spinach Salad


1 egg
1 cup of spinach
2 cm cube of feta cheese
1/4 cup of kidney beans
1/4 of an avacado
1 tbsp of olive oil
1 tbsp of apple cider vinegar
Salt
Pepper

This is perfect for lunch! It keeps you full for hours and can be made in under 10 minutes!

Simply cut all your veggies (avacado is a fruit?) and cheese, add your beans, pour the vinegar and oil overtop, add 1 fried egg on top and some salt and pepper! EASY!!!!!!!

This recipe altogether has roughly 20 grams of protein! Almost half your intake for the day! I am often not a fan of raw salad but with the egg, cheese and creaminess from the avacado, it was rich and savoury!
